Nordic symposium on food tourism labs

On June 3rd to 4th, Centre for Tourism arranged a ”Nordic symposium on food tourism labs”. 11 researchers from Norway, Denmark and Sweden gathered at the newly established Garveriet, an old tannery in the small community of Floda, about 30 km east of Gothenburg.

The old industrial premises serve as a meeting place and “think tank” for sustainable food, with a restaurant, a bakery, conference rooms and soon also greenhouses, cultivation lots and fish farming. One of the co-owners, Matts Johansson, introduced the concept to the participants, who also presented their ongoing research. Rewarding discussions arose, on food tourism lab’s innovation processes, environments, actors and methods/tools. The day ended in the food studio where they prepared and had dinner together.

On the second day, the presentations and discussions continued at the School of Business, Economics and Law. Involving several disciplines and institutions, the symposium resulted in new knowledge and a lot of interesting ideas about future collaborations.
